I found myself looking up the benefits of cauliflower as I was consuming more of it than usual. It’s a great vegetable which can make a bunch of varying dishes.
Different kinds of fruit and veggies have been proven to reduce the chances of developing many adverse health conditions. Eating more plant foods, such as cauliflower, has been found to decrease the risk of obesity, diabetes and heart disease. While promoting a healthy complexion, increased energy, and overall lower weight.
Ingredients Yield: 3 – 4 Servings

1/ 2 cauliflower head
2 chicken breast/fillet
1 tin chickpea
Mild curry
Salt
Cajun
Cayenne pepper
Oil
Method
Pre-heat oven at 180° degrees
Chop and put cauliflower florets into bowl
Sprinkle lightly with salt, curry and oil
Roast in the oven for 15- 20min
Cut chicken into half lengthwise (butterfly cut I think it’s called)
Rub with cajun, cayenne and salt
Lightly fry on both sides on medium to high heat
Set aside to cool before cutting into cubes and adding back to pan
Add cauliflower and chickpeas and mix over low heat to allow flavours to come together.
Add fresh herbs of choice, parsley or cilantro.
Notes
Enjoy this roasted cauliflower, chicken and chickpea salad cold or warm. It doesn’t need dressing, but if preferred, a lemon & honey dressing works amazingly. It’s pretty filling on its own, but can be complemented with a bowl of rice.
