I discovered cheesecake when I was in university, and have been hooked ever since. The fun part is you can make a cheesecake whatever you want it to be. There’s the traditional lemon cake is rich and lemony, you can add fruit for a lighter, fresh twist or your favourite chocolate for a Rolo or Bar One cheesecake.
The best thing for me as a mum is my whole family now shares my sentiments for a good cheesecake. My husband loves it and has it regularly, always getting me to try new flavours. My kids enjoy the sweetness and crumble of the base making it an easy treat for the whole family.
Grab these four ingredients, forget the oven for this one and make it creative.
Ingredients Yield: 8 slices

1 Packet Tennis or Digestive Biscuits
385g Condensed Milk
1kg Plain Yoghurt
Granadilla Pulp
Instructions
Crush the biscuits until sand consistency.
Empty crumbs into a glass or microwave-safe dish.
In a separate bowl mix the plain yoghurt and condensed milk. Mix until well combined.
Pour the filling into the crust. Take your time and smooth out the top.
Place in the microwave and cook for 5 minutes.
Remove from the microwave and allow to cool.
Pour granadilla over the top before refrigerating for 5hrs or leave in the fridge overnight.
Notes
Different fruits or toppings can be used other than granadilla.
