These churro cups are a fun spin to the traditional Spanish recipe. They win over the crowd whenever I bring them to summer potlucks. For the simple reason that you can put all sorts of tasty treats in there. A popular kiddies choice is usually vanilla ice-cream.
Churros can be a little intimidating on your first try, remember to have fun until you get the hang of it.

Ingredients Yield: 6 churro cups
1 cup of water
2 Tbs brown sugar
½ tsp salt
¼ cup butter
1 cup Bokomo cake flour
1 tbs vanilla essence
2 large eggs
Grab a medium pot and place it over the stove on low-medium heat. Simmer the cup of water, sugar, salt and butter while stirring the entire time to combine the mixture.
Add flour once everything is melted and mix well. Once well combined, remove the pot from the heat and allow to cool for about 15 mins.
Add the eggs after the dough mixture has cooled, to avoid eggs from scrambling.
After eggs are mixed in add in the vanilla essence and incorporate it well in the mixture.
Add the dough into a piping bag with a star tip.
Grease the bottom of your medium-sized muffin tin, and pipe all around them to make the cup shape. Make sure to space the piped churros so it’s easy to remove once you’re ready to fry.
Once piped, place the churro mix in the freezer for 3-4hours (until hardened).
Heat up oil to fry, once the churros are frozen. Fry 1 or 2 at a time to maintain the heat of the oil. Too many churros in the pot will cause the temperature of the oil to drop.
Fry until golden brown. Remove churro cups from oil on a dripping rack and dip in cinnamon sugar.
If the churros start to melt or soften whilst others are frying, place back in the freezer.
For extra yumminess, melt dark or white chocolate and add to the rim of the churro cups and sprinkles. To serve scoop in ice-cream or serve with custard.
