Custard scones are one of my favourite confections to bake. Firstly, who doesn’t love custard? Secondly what a way to put a twist on one of the most enjoyed baked goods in Botswana – I think scones make the list of local traditional foods.
These scones are easy to make, quick, and super fluffy. Sure to blow everyone away!

Ingredients Yield: 20
3 1/2 cups cake flour
4 teaspoons baking powder
2 eggs
1/2 cup of sugar
1 teaspoon vanilla essence
1/2 cup custard
1/2 low-fat plain yoghurt or madila
240g margarine (17 tablespoons)
Instructions
Sift all your dry ingredients together.
Incorporate the butter into the mixed dry ingredients using your hands until it resembles bread crumbs.
On a separate bowl beat eggs, add vanilla essence, and add the custard.
Pour your wet mixture into the dry mixture.
Roll your dough on a floured surface and firmly press until evenly spread out.
Use a cookie cutter or a glass to cut out round shapes.
Spray your baking pan with a cooking spray or butter baking tray.
Add the batter and egg wash over them with a beaten egg and about a tablespoon of water for a golden brown finish.
Spread the batter evenly across the tray and bake for 20minutes at 180° degrees celsius.
Notes
Serve with a hot cuppa, a tall glass of milk, or enjoy them on their own. These yummy scones can also be enjoyed with a side of custard. Or in a more traditional manner with butter, jam, cheese. Make sure to store them in a cool dry place.
