My husband and I accepted a challenge recently, to cook a meal together. I will admit I was surprised by how easy it was, even with our toddler running around.
We got to look back on fond memories and share a few laughs. At the end of it all our bellies were full and so were our hearts. This was much-needed time off for him being an entrepreneur Dad and me being a stay-at-home mum and running The Honey Pot Cuisine. A number of people wanted to know the recipes for the three-course meal, so here they are.
Mushroom Soup
Ingredients
2 packs of mushrooms
1 chicken stock
1 onion
2 garlic cloves
Knob of butter
Tbsp of any dried herbs of choice
1/4 cup cream/milk
1 cup water
Tbsp of flour
Salt
Pepper
Method
Put knob of butter then add your onion and garlic, saute until softened. Add your mushroom and cook till softened add a tablespoon of flour, your herbs and stock with water. Salt and pepper to taste. Let simmer for 10-15mins once done blitz or blend and take the soup off heat add your cream or milk and ready to serve
Steak
Ingredients
2 cloves of garlic
2 cloves of star anise
1tsp Garlic pepper
1tsp Cajun spice
2tbsp butter
Salt
Pepper
Method
Season your steak with salt and pepper. Crush star anise or blender. Heat up your pan add butter let it sizzle then add your spices and garlic. Pan should be piping hot. Add your steaks cook on each side for 6-8 mins for a medium-rare steak. Longer for if you want a well-done steak. About 10-12 mins. Let steak rest for about 10 mins then slice and use the steak just to cover on your steak once sliced
Salad
Ingredients
Feta cheese of your choice
Avocado
Cucumber
Mixed lettuce or any green salad
Tbsp red wine vinegar
A Tsp of olive oil
1 Tsp Salt
Tsp Pepper
1 garlic clove pressed
Tsp herbs
Mix ingredients in a bowl for salad. Chopping up your ingredients bitesize
Apple Crumble
Ingredients
3/4 apples
1 packet instant oats original
2 tsp cinnamon
4 tbsp brown sugar
1 tsp lemon juice
1/4 cup flour
50 grams cold butter
Raisins, custard, ice cream (optional)
Method
Core, peel and slice apples of choice. Add lemon juice and mix. Then add 1tsp cinnamon 2 tbsp brown sugar and mix. Set aside.
Add remaining ingredients to a separate bowl mix with hands and refrigerate for 10-15 mins. Once ready add apple mix to a bowl and cover with oat mix. Raisins are optional. Place in the oven for 20-25 mins or until the top is golden brown.
Serve with ice cream or custard.
There you go. I call this the 3-in-1 meal; something easy to make, quality time, and an impressive step up from the usual main course only meal at home, for when I’m avoiding public places.
