I might be a good cook but I’m not a baker… cakes are dry, muffins sink and bread flops. However, my favourite food is anything flour based. Add on some melted cheese and I’m the happiest person on earth. My dream date isn’t prawns and fancy food- it’s pizza. Luckily my family agrees with me and nothing beats a pizza night.
That’s why I wanted to finally figure out how to cook the food that feeds my family’s soul. 100’s of recipes later and I have the perfect pizza dough recipe to share with you, just promise to keep it our secret ok?
Oh and the good news there is no need for fancy pizza stones for this one. Phew. This is a no-frills recipe. Pizza comes out a rectangle, a touch rugged but absolutely delicious!
There are lots of super lovely recipes out there. I’m more about keeping it basic. A jar/tin of tomato puree works just great. Let that cheese sing.
I like a mix of half mozzarella and cheddar, but this is all up to you.
My personal favourite pizza is mushrooms cut thin, peppers and extra mozzarella. However, my son wants a simple margarita. Literally nothing on it but cheese.
He does enjoy having various toppings to choose from to help make your pizza. That’s half the fun is having everybody being a ‘Masterchef’. So pull out whatever is in your fridge and get creative.
The Dough (Makes 2 Pizzas)
1 x (10 gram) package active dry yeast
1 x cup warm water
2 1⁄2 x cups Bokomo cake flour
1⁄4 x teaspoon salt
1 x teaspoon of Pure sugar
1⁄2 – 1 x tablespoons olive oil
Mix a little sugar into the warm water and sprinkle the yeast on top in a large bowl. Wait for 10 minutes or until it gets all gross looking and foamy.
Add in the flour, salt, olive oil. Combine it all together. Take out of the bowl and knead this for 8-10 minutes until you have a moderately stiff dough that is smooth and beautifully elastic. You can always add in more or a little less flour if you need to. Cover and let rest for 25-30 minutes.
Put oven onto 220 degrees C.
Lightly grease two baking trays. Divide your dough into half. Use a rolling pin to get the dough thinner and the shape you need. Then place each half on a pizza pan. Use your fingers to pat the dough until it stretches over the whole pan. It is an extra bonus if you make it thicker around the edge. That’s gold star stuff.
Put the pizza base into the oven for 5 mins. Take it out and then spread with pizza sauce, cheese and use the toppings of your choice. Just watch out the tray is hot.
Bake at 220 F for 6- 8 minutes longer or until bubbly and hot.
If you don’t want to use all the dough, you can freeze it. Bonus. Take the dough, form it into a ball, rub olive oil over it and place it in a freezer bag.
When you want to make a pizza, take the dough out of the freezer and allow it to thaw before using. Don’t try to defrost in the microwave – I did, and it was obviously a disaster.
