Who doesn’t love a good lasagna? It’s the perfect comfort food. Even better when shared with loved ones. We thought to share a Team Family Gems favourite. Our good friend, Happy’s lasagna, that you could honestly inhale in one sitting. It’s just that good.
It’s said that the best meals are made with love and laughter. There was plenty of both as all hands were on deck for this golden, crispy, creamy, flavourful, hug-on-a-plate comfort meal.

Preparation time: less than 30 minutes
Cooking time: bake for 40 minutes
Serves: 8 – 10 servings
Ingredients

For the mince
1 tbsp oil
Whole onion, chopped
1 green pepper, diced
1 baby marrow, grated
Whole carrot, grated
250g mushrooms, diced
600g beef mince
410g canned diced peeled tomatoes
1 tsp garlic
1 beef stockpot
Salt
Assorted spices
For the white Sauce
1/2 cup Bokomo white cake flour
1 1/2 cup melted butter
750ml milk
For the lasagna
1 box lasagna sheets
200g cheddar cheese
Method
Beef Mince

Preheat the oven to 190 degrees celsius.
Pour the oil into a large pot, add the mince and fry for 3 minutes.
Add the garlic, carrot, baby marrow and green pepper. Allow to cook for another 3 minutes and add the mushrooms last.
Add the beef mince and stockpot and stir together.
Stir in the canned tomatoes. Add salt and season well. Bring to the boil and allow to simmer until the beef is tender.
White Sauce

Melt butter in a saucepan
Stir in the flour and cook for 1-2 minutes
Take the pan off the heat and gradually stir about a third of the milk
Return to the heat and simmer, stirring, until all the milk is absorbed
Repeat this process, stirring all the time, allowing the sauce to become thick and shiny before adding more milk
When the sauce is about thick custard consistency add the mustard powder and a pinch of black pepper
Leave to simmer for 8-10 minutes
Layer the ingredients, starting with the mince, followed by half the lasagna sheets and a layer of white sauce. Repeat the layering and top off with a thick layer of cheese.

Put in the oven for about 40 minutes. The cheese will start to bubble up. Wait for the glorious golden colour.
To be honest we couldn’t wait for the lasagne to cool down before we started dishing.
Notes
For added flavour, add a spoon of packet soup to the beef mince when cooking. You can complement the lasagna with a fresh green salad.
This lasagna can be frozen and pulled out for a mid week family meal.
